  • 1 bag fresh spinach
  • 2 dessert spoons crème fraîche (double cream)
  • 4 eggs
  • Nutmeg
  • Salt
  • Pepper


  • Pre heat the oven (180ºC thermostat 6). In a frying pan, quickly brown the spinach with some olive oil. Add the double cream over low heat.
  • In 4 ramekins, put the spinach. Break one egg per ramekin. Season with salt, pepper and nutmeg.
  • Put the ramekins in the oven for around 8min. Let it cool 4-5min before serving.
