How to make Carrot Soup

Ingredients
  • 2 tablespoons Olive oil
  • 1 Onion chopped into the small pieces
  • 1 Potato
  • 5 cups vegetable stock
  • 1 cup orange juice
  • salt
  • Pepper
  • 350 grams Carrot chopped into the small pieces

  • 2 tablespoons Olive oil
  • 1 Onion chopped into the small pieces
  • 1 Potato
  • 5 cups vegetable stock
  • 1 cup orange juice
  • salt
  • Pepper
  • 350 grams Carrot chopped into the small pieces
Instructions
  1. Heat the olive oil in a large saucepan. Add onion and cook over low heat until transparent, (5 minutes).
  2. Add carrots and potatoes, broth. Add salt and pepper to taste. Cook on medium heat for about 20 minutes, or until carrot and potato are tender.
  3. Then blend the soup to create a cream and add the orange juice. Cool in the fridge for 2 hours.
